Contributions from the conference can be considered for publication in a Special Issue of Magnetic Resonance in Chemistry on Multiscale Food Structures (Hanne Christine Bertram and John van Duynhoven acting as editors). The Special Issue will be open to all papers that are within scope (see below) but will be of particular interest for contributions to be presented at the conference on the Applications of Magnetic Resonance in Food Science. 


Scope statement
Food structure is decisive for attributes of food systems and comprises technological, biofunctional, nutritional, and digestive aspects. The objective of this special issue is to emphasize the potentials of magnetic resonance (MR) techniques for the characterization of food structures on different length scales. For this purpose, a collection of papers presenting MR applications in food science is invited. Contributions for the special issue can include any MR technique such as applications involving relaxometry, diffusion, imaging, and spatial distribution of metabolites and molecules, but also other relevant MR applications focusing on structural aspects to characterize and improve our understanding of food systems, food products, food compounds, and ingredients are welcomed.
