Our conference launches with a one-day visit to The Green Museum and National Centre for Food and Agriculture (DCA, part of Aarhus University). At this site in Djursland, we will engage with histories, narratives, and futures of hunting, forestry, agriculture, and food in the museum, and in addition, meet plant and fruit researchers based at the Aarhus University research station near the museum.
Through a spatial and sensory engagement with the exhibitions of Danish agriculture, food, and meal history, we create a reflexive space that stimulates thinking and scientific exchange. This visit will inspire collective knowledge production and generate new insights. The Green Museum and the National Centre for Food and Agriculture both explicitly engage in international exchange, collaboration, and outreach as part of their formal strategies. The visit by over 200 international gastronomy researchers and practitioners will contribute to fulfilling these aims, with the potential for network building and platform development for future collaboration.
